Cheerfully Frugal Recipe Ideas

As I mentioned before, I'm always on a mission to keep our menu varied and yet stick within our budget. This weekend, I've been searching the web to come up with some more yummy recipes that will be easy to use to add variety to our weekly menu planning. I've tried to find some recipes that are based around inexpensive cuts of meat.

Chicken Recipes
Shrimp Pad-Thai (I will substitute with leftover chicken from a roast)
Risotto with Basalmic Glazed Chicken Thighs
Osso Buco-Style Chicken Thighs
White Bean & Chicken Chili
Lemony Chicken Breast with Rice
Roasted Chicken Thighs Provencal
Quick Coq au Vin

The lemony chicken sounds good! Here's another easy recipe

Enchiladas:
Mix
-2 C Chicken broth
-1 C Sour Cream
-1 C Salsa (Green is the prefered, but anything works)

Pour half the mixture into a 9x11 (or about that size) casserole dish. Roll meat in corn tortillas (I make a pork loin roast in the slow cooker with garlic, cilantro, coke, and one jalepeno seeded, and this is one recipe I use the meat in) and place in dish. Cover with grated cheese and the remaining sauce.

Cooked covered for 10 min at 400, and then uncovered for 15.. they taste as good as the restaurants!!!

Thanks for the recipe Tamryn! Makes me miss the salsa back home, especially the green salsa. Wish I could get some here! If I could I would make your recipe tonight! x s
